6 eggs

1/3 cup coconut milk

1 cup apple sauce

2 Tbsp. raw honey

1 tsp. sea salt

1/4 cup butter, melted

3/4 cup coconut flour

2 tsp. baking powder

1 tsp. baking soda

1/4 cup unsweetened coconut

Directions:

Preheat oven to 400 degrees.  In a large bowel, combine eggs, coconut milk, apple sauce, honey and sea salt. Beat all ingredients with either a hand or stand mixer.  Once combined, add melted butter and set aside while preparing the dry ingredients.

Sift the coconut flour, baking powder and baking soda and add to the wet mixture.  Beat until there are no lumps remaining.

Grease a muffin pan with coconut oil.  Fill the muffin pan cups 3/4 full and sprinkle each muffin with a pinch of shredded coconut and bake between 14-18 minutes

Let cool for 10 minutes and remove from pan.  Enjoy with liberal amounts of butter and a drizzle of raw honey.
